Have you met Yves? The Frenchiest pastry chef in Australia, ex-chef from Melbourne’s Kisume; Sydney’s Sake and fine diner Est., currently coach for the Australian team at the Pastry world cup and owner of the highly rated bakery Madame and Yves in Clovely.

On the agenda: learn how to make a Cheesy Creation in good company. Class will be on a glorified ham and cheese croissant making a béchamel and using a double creme cheese, grilled with French Emmental ( just added on) topped with prosciutto and honey glazed walnuts.

For dessert we will have a Fourme d’Ambert Gelato.
